MAX CREEK HATCHERY

PHILIP GLASS : COMPOSER

If you know Phillip Glass you'll understand the title and how his head works, and maybe mine. His works are series of repetitive notes composed into full symphonies and film score, where I was first introduced to his craft. Phillip's work is highly criticized, though he is the foremost composer of our time. There's always been something about repetition that allows me to focus. SALABAT

During the winter I always crave ginger tea. Filipinos have a version called Salabat. My favorite Filipino chef, Romy Dorotan and his partner Amy Besa have a recipe in their book, Memories of Philippine Kitchens.
1 pound fresh ginger, cut into large chunks
2 oranges, peeled and sliced
2 apples, peeled, cored and sliced

Honey for serving

Place the ginger, orange and apple slices in a large saucepan. Add 10 cups water, bring to a boil, then reduce the heat and simmer for about 10 minutes, or until the brew has developed a nice flavor, strain through a very fine sieve into a large teapot or two teacups. Serve with honey. - VW

THE NEW WORLD : TERRENCE MALICK

We named our standard trousers after Terrence Malick. He directed The New World in 2005. You have to see it at least three times to take it in; we saw it five. The story is set in Jamestown and accounts the lives of John Smith and Pocahontas.
Before we began even the first samples, we spent a lot of time building an environment that was heavily influenced by Malick’s aesthetic. Natural elements of wood, leather and hardware are a constant in the collection and recalls Malick’s vision of quiet-beauty.-VW
